The activity of pastoralism, always characteristic of the Zambernardi family, has roots of almost a century of life, but only in 2000 by the brothers Mauro and Graziano Zambernardi, the Bellavista Dairy was born. The passion of the brothers and their families to follow, have pushed a step to their activity by moving soon from the assistance of sheep to the production of cheese. Today the breeding has almost 1000 garments and also the equipment of the dairy has grown in proportion to the new production needs, always safeguarding the handmade nature and enthusiasm of the first moments.

A dairy in Grosseto that is a real little corner of taste.

The “Podere Bellavista” dairy, a true reality of excellence of the territory. Here, it is possible to find only selected, guaranteed “km 0” Maremma cheeses such as pecorino, ricotta and yogurt, all prepared with passion and love by real artists of the sector. Excellent Tuscan goodness of the first order such as: Val di Rigo, Poggio Alto, La Fornace, Fontino, Limonello and many others … all fresh, semi-seasoned and seasoned products, to have all the taste and flavor of Tuscan specialties at reach. The main objective of the activity of the dairy is to maintain a high level of product quality by constantly focusing on quality, carefully selecting the products that will then be displayed in the store, then destined to the tables of consumers.

The Zambernardi agricultural company, for years, uses livestock protection dogs and night shelters to better manage the sheep and reduce attacks by predators. The milk used to be transformed into cheese comes from our certified sheep breeding and subjected to careful quality controls. The processing

To make cheese, the milk is poured into a boiler (steel container), where it is heated to a variable temperature depending on the cheese to be obtained. Whether using raw milk or pasteurized milk, it is possible to inoculate selected milk enzymes to promote the fermentation processes through acidification, and for those cheeses that require it, insert the classic molds of cheeses with flowery or rind crust. Moreover, making cheese with raw milk means keeping all the microbiological characteristics that are a fundamental part of the birth of typical cheeses !

The territory

The Maremma Grossetana, or Maremma proper, is the central part included in the province of Grosseto, along the coast between the Gulf of Follonica and the mouth of the river Chiarone that flows into the sea south of the Argentario promontory and also includes the lower Valle dell’Ombrone.

Istia d’Ombrone is a fraction of the Italian town of Grosseto (Tuscany) located about 6 km east of the capital. The village of Istia d’Ombrone is served by the provincial road 159 Scansanese, which connects the city of Grosseto with Scansano and Manciano inland, and which constituted a stretch of the former highway 322 of the Collacchie, ending in Follonica.
